  • Sicilian Rice Balls

    Day 1 – Make Risotto Base:

    Heat 1L chicken broth in saucepan, keep simmering.

    In separate pan, melt 2 tbsp butter, cook 1 finely chopped onion until translucent (5 min).

    Add 400g Arborio rice, toast 2 minutes until pearly.

    Add 1/2 cup white wine, stir until absorbed.

    Begin adding hot broth, one ladle at a time, stirring constantly until each is absorbed before adding next (about 18 minutes total).

    When rice is al dente, remove from heat, stir in 100g grated Pecorino, 100g diced mozzarella, 2 tbsp chopped parsley. Spread on baking sheet, cool to room temperature, then refrigerate overnight.

    Day 2 – Form and Fry:

    Prepare filling: Mix 200g cooked ground pork/beef with 1/2 cup peas, 2 tbsp tomato paste, 1/4 cup diced mozzarella.

    Prepare coating stations: 3 bowls – 1) 200g flour + 1/2 tsp salt, 2) 3 beaten eggs, 3) 200g breadcrumbs.

    Wet hands with water, take ? cup cold risotto (approx 100g), flatten in palm.

    Place 1 tbsp meat filling in center, enclose completely, shape into ball or cone.

    Roll in flour, shake off excess ? dip in egg ? roll in breadcrumbs, pressing to adhere.

    Heat 1L vegetable oil in heavy pot to 170°C/340°F (use thermometer).

    Fry 3-4 arancini at a time, 4-5 minutes until deep golden brown, turning occasionally.

    Drain on wire rack over baking sheet (not paper towels to prevent sogginess).

    Rest 5 minutes before serving (filling will be molten hot).

  • Cooked Cream Dessert

    Bloom Gelatin: Sprinkle 2 1/2 tsp (7g) unflavored powdered gelatin over 1/4 cup (60ml) cold whole milk in small bowl. Let stand 10 minutes until spongy.

    Heat Cream Mixture: In saucepan, combine 2 cups (480ml) heavy cream (min 35% fat), 1 cup (240ml) whole milk, 1/2 cup (100g) granulated sugar, 1 vanilla bean (split lengthwise, seeds scraped) or 2 tsp vanilla extract.

    Warm Gently: Heat over medium-low, stirring frequently, until mixture reaches 70°C/160°F (steaming but not boiling). Remove from heat immediately.

    Dissolve Gelatin: Add bloomed gelatin to hot cream mixture. Stir continuously for 2 full minutes until completely dissolved (no visible granules).

    Strain: Pour mixture through fine-mesh sieve into large measuring cup or bowl with spout to remove any undissolved gelatin or vanilla bean pieces.

    Cool Slightly: Let mixture cool at room temperature 20 minutes, stirring occasionally to prevent skin formation.

    Prepare Molds: Lightly oil 6 ramekins (120ml each) with neutral oil (grapeseed or vegetable) using pastry brush.

    Pour and Chill: Divide mixture among ramekins. Cover each with plastic wrap touching surface. Refrigerate minimum 6 hours, preferably overnight.

    Unmold: To serve, run thin knife around edge of each ramekin. Dip bottom in warm water for 5-10 seconds. Place serving plate on top, invert, and shake gently until panna cotta releases. If stubborn, repeat water bath.

    Serve: Garnish with fresh berries, fruit coulis, or caramel sauce.

  • Roman Veal with Prosciutto and Sage

    Prepare Veal: Get 8 veal scallopine (escalopes), about 100g each, 1/2cm thick. Place between plastic wrap, pound gently to 1/4cm thick using meat mallet or rolling pin.

    Season: Sprinkle each piece lightly with salt (prosciutto is salty, so minimal salt) and freshly ground black pepper.

    Add Sage: Place 1 fresh sage leaf in center of each veal piece.

    Add Prosciutto: Cover sage leaf with 1 thin slice prosciutto crudo (San Daniele or Parma), trimmed to same size as veal. Secure with toothpick through all layers.

    Dredge: Lightly dust both sides with flour, shaking off excess.

    Cook in Batches: Heat 3 tbsp olive oil + 2 tbsp butter in large skillet over medium-high until butter foam subsides.

    Sear: Add veal pieces prosciutto-side down first. Cook 2 minutes until prosciutto is crisp and golden.

    Flip and Cook: Turn carefully, cook 1 more minute until veal is just cooked through (should remain pale, not browned). Remove to warm plate, tent with foil.

    Make Sauce: Reduce heat to medium. Add 1/2 cup (120ml) dry white wine (Frascati), deglaze pan, scraping up browned bits. Simmer 2 minutes until reduced by half.

    Finish Sauce: Add 1/2 cup (120ml) chicken stock, simmer 3 minutes. Remove from heat, swirl in 2 tbsp cold butter until glossy. Stir in 1 tbsp chopped parsley.

    Serve: Remove toothpicks from veal. Pour sauce over veal, garnish with additional sage leaves.

  • Sicilian Cannoli

    Make Shells (Day 1):

    Mix dry: 250g flour, 2 tbsp sugar, 1/2 tsp cinnamon, 1/4 tsp salt.

    Cut in 2 tbsp lard (or butter) until crumbs form.

    Make well, add 1 egg, 2 tbsp Marsala wine, 1 tbsp white vinegar. Mix with fork.

    Add water 1 tbsp at a time until dough forms (about 2-4 tbsp). Knead 10 minutes until smooth. Wrap, rest 1 hour.

    Roll dough to 2mm thickness on floured surface. Cut into 10cm circles.

    Wrap each around cannoli tube, seal edge with egg white. Fry in 190°C/375°F oil 2-3 minutes until golden. Slide off tubes while hot, cool on rack.

    Make Filling (Day 2):

    Drain 500g ricotta in cheesecloth-lined sieve over bowl, refrigerate 24 hours.

    Beat drained ricotta with 150g powdered sugar, 1 tsp vanilla, 1/2 tsp cinnamon until smooth.

    Fold in 100g chopped chocolate (50g mini chips + 50g grated dark).

    Cover, chill 2 hours.

    Fill: Using piping bag with large star tip, fill shells from both ends. Dip ends in chopped pistachios.

    Serve immediately (shells soften quickly). Dust with powdered sugar.

  • Caprese Salad

    Select Ingredients: 4 ripe but firm medium tomatoes (approx 200g each), 2 balls fresh buffalo mozzarella (125g each), 30 fresh basil leaves, high-quality extra virgin olive oil, flaky sea salt, freshly ground black pepper.

    Prepare Tomatoes: Core tomatoes, slice into 1/2cm thick rounds using serrated knife. Arrange on paper towel-lined plate, sprinkle lightly with salt, let drain 15 minutes to remove excess moisture.

    Prepare Mozzarella: Drain mozzarella, pat dry with paper towels. Slice into 1/2cm thick rounds (should yield same number as tomato slices).

    Assemble Pattern: On large platter, arrange alternating slices: tomato ? mozzarella ? tomato ? mozzarella, slightly overlapping in circular pattern or straight rows.

    Add Basil: Tuck whole basil leaves between layers, reserving 10 small leaves for garnish.

    Season Generously: Sprinkle with 1/2 tsp flaky sea salt (Maldon), 1/4 tsp freshly ground black pepper.

    First Oil Drizzle: Drizzle with 2 tbsp extra virgin olive oil in zigzag pattern.

    Rest: Let stand at room temperature 10-15 minutes to allow flavors to meld.

    Final Touch: Just before serving, drizzle with additional 1 tbsp olive oil, garnish with remaining basil leaves.

    Optional: Add few drops of aged balsamic vinegar (aceto balsamico tradizionale) if desired, but traditional version is just oil.

  • Mushroom Risotto

    Prepare Mushrooms: Clean 400g mixed mushrooms (porcini, cremini, shiitake) with damp cloth (do not wash). Slice 300g into 1/4-inch slices, finely chop 100g for flavor base. If using dried porcini (20g), soak in 2 cups hot water 30 minutes, reserve liquid, chop rehydrated mushrooms.

    Make Mushroom Stock: In saucepan, combine 1.5L vegetable or chicken stock, mushroom soaking liquid (strained through coffee filter), 1 smashed garlic clove, 1 sprig thyme. Heat to simmer, keep warm.

    Sauté Mushrooms: Heat 2 tbsp olive oil + 1 tbsp butter in large skillet over medium-high. Add sliced mushrooms, cook 8-10 minutes until browned and liquid evaporates. Season with salt, pepper, 1 tsp chopped thyme. Remove half for garnish.

    Start Risotto Base: In heavy-bottomed pot, melt 3 tbsp butter over medium. Add 1 finely chopped shallot, cook 3 minutes until soft. Add 400g Carnaroli rice, toast 2 minutes until translucent edges.

    Deglaze: Add 1/2 cup dry white wine, stir until absorbed.

    Begin Adding Liquid: Add 1 ladle (about 1/2 cup) hot mushroom stock, stir constantly until absorbed. Continue adding stock ladle by ladle, maintaining gentle simmer.

    Add Mushrooms: After 10 minutes, stir in chopped mushrooms and half of sautéed sliced mushrooms.

    Continue Cooking: Continue adding stock and stirring for another 8-10 minutes until rice is al dente with creamy consistency.

    Final Touch: Remove from heat, stir in 2 tbsp cold butter, 1/2 cup grated Parmigiano-Reggiano, 2 tbsp chopped parsley. Cover, rest 2 minutes.

    Serve: Divide among bowls, top with reserved sautéed mushrooms, extra Parmigiano, drizzle of truffle oil (optional).

  • Spaghetti Carbonara

    Spaghetti Carbonara

    Prep Ingredients: Cut 150g guanciale into 1/4-inch thick strips. Grate 100g Pecorino Romano cheese. Separate 4 egg yolks and keep 1 whole egg at room temperature. Grind black pepper generously.

    Start Pasta Water: Bring 4L water to a rolling boil in a large pot. Add 2 tbsp salt when boiling.

    Cook Guanciale: While water heats, place guanciale in a cold large skillet. Cook over medium heat 8-10 minutes until fat renders and meat is crispy but not hard. Remove from heat, leaving rendered fat in pan.

    Prepare Egg Mixture: In a medium bowl, whisk 4 yolks + 1 whole egg vigorously until smooth. Mix in 3/4 of grated Pecorino and generous black pepper (about 1 tsp). Mixture should be thick but pourable.

    Cook Pasta: Add 400g spaghetti to boiling water. Cook 1 minute less than package instructions for al dente texture (usually 9-10 minutes).

    Reserve Pasta Water: Before draining, scoop out 1 cup of starchy pasta water.

    Combine Hot Pasta with Guanciale: Drain pasta, immediately add to skillet with guanciale and fat. Toss over low heat for 1 minute to coat pasta evenly with fat.

    Temper Egg Mixture: Remove skillet from heat. Wait 30 seconds (pasta should be hot but not sizzling). Pour egg mixture over pasta while quickly tossing with tongs. The residual heat should cook eggs into a creamy sauce without scrambling.

    Adjust Consistency: Add reserved pasta water 1 tbsp at a time while tossing until sauce reaches silky, creamy consistency (usually 3-4 tbsp).

    Final Serve: Plate immediately, topping with remaining Pecorino, extra black pepper. Serve within 2 minutes for optimal texture.

    Chef’s Note: Never add cream. The sauce comes from emulsified egg, cheese, pasta water, and pork fat.

  • Classic Tiramisu

    Make Zabaglione:

    Prepare bain-marie: Fill saucepan with 2 inches water, bring to simmer. Place heatproof bowl on top (bottom not touching water).

    Whisk 6 egg yolks + 3/4 cup granulated sugar in bowl until pale and thick (about 5 minutes).

    Gradually add ? cup Marsala wine (or dark rum), whisking constantly. Cook 8-10 minutes until mixture triples in volume, reaches 71°C/160°F, and leaves ribbons.

    Remove from heat, continue whisking 2 minutes to cool slightly.

    Prepare Cream Base:

    In separate bowl, beat 500g mascarpone (room temperature) with spatula until smooth.

    Fold mascarpone into cooled zabaglione in 3 additions until fully incorporated.

    In chilled bowl, whip 300ml heavy cream (35% fat) to medium peaks.

    Gently fold whipped cream into mascarpone mixture until uniform.

    Assemble:

    Brew 2 cups strong espresso, cool to room temperature. Stir in 2 tbsp Marsala or rum.

    Quickly dip 24 Savoiardi ladyfingers (one at a time) into coffee for 1 second per side — moist but not soggy.

    Arrange 12 dipped ladyfingers in single layer in 9×13 inch dish.

    Spread half cream mixture (about 3 cups) evenly over ladyfingers.

    Repeat with remaining ladyfingers and cream.

    Cover with plastic wrap touching surface. Refrigerate 6 hours minimum, preferably overnight.

    Serve:

    Just before serving, dust entire surface generously with unsweetened cocoa powder using fine-mesh sieve.

    Use warm knife (dipped in hot water, wiped dry) for clean cuts.

    Serve within 2 minutes of dusting to prevent cocoa absorption.

  • Margherita Pizza

    Margherita Pizza

    Day 1 – Make Poolish (Pre-ferment): Mix 100g tipo 00 flour, 100ml water at 30°C, and 1g fresh yeast. Cover, let ferment at room temp 16-18 hours until bubbly and doubled.

    Day 2 – Make Main Dough: In stand mixer, combine 400g tipo 00 flour, 225ml water at 20°C, 10g salt, 2g fresh yeast, and the poolish. Mix on low 4 minutes, then medium 8 minutes until smooth.

    Bulk Fermentation: Transfer dough to oiled bowl, cover. Rest 2 hours at room temp (24°C), performing 3 sets of stretch-and-folds at 30-minute intervals.

    Divide and Ball: Scale dough into 250g portions. Shape into tight balls by tucking edges under. Place on floured tray, cover with damp cloth.

    Cold Proof: Refrigerate dough balls 24-72 hours for flavor development.

    Remove from Fridge: Take dough out 3-4 hours before baking to reach room temperature.

    Prepare Toppings: Crush 400g San Marzano tomatoes by hand (no blender). Drain excess liquid. Tear 200g fior di latte mozzarella into small pieces. Pick 20 fresh basil leaves.

    Preheat Oven: Place pizza stone or steel in oven. Preheat to highest setting (260°C/500°F) for 1 hour minimum.

    Shape Dough: Lightly flour work surface. Press dough ball from center outward, leaving 1cm border. Lift and gently stretch from edges, rotating to form 30cm circle. Avoid rolling pin.

    Assemble: Transfer dough to floured peel. Spread thin layer of tomatoes (about ? cup). Arrange mozzarella evenly. Drizzle with extra virgin olive oil.

    Bake: Slide pizza onto hot stone. Bake 5-7 minutes until crust is puffed with leopard spotting.

    Finish: Remove from oven, immediately add fresh basil leaves. Let rest 1 minute before slicing.

    Napoli SOP: Authentic Neapolitan pizza is cooked at 485°C for 60-90 seconds in wood-fired oven.

  • Ligurian Focaccia

    Day 1 – Biga (Pre-ferment):

    Mix 200g tipo 00 flour, 130ml water at 20°C, 1g fresh yeast until shaggy dough forms.

    Cover, ferment at room temperature 12-16 hours until bubbly and tripled.

    Day 2 – Main Dough:

    In stand mixer with dough hook, combine biga, 300g tipo 00 flour, 200ml water at 20°C, 10g salt, 5g malt syrup (or honey), 5g fresh yeast.

    Mix 3 minutes low speed, then 10 minutes medium speed until smooth, elastic dough.

    Gradually add 50ml extra virgin olive oil while mixing until fully incorporated.

    First rise: Transfer to oiled bowl, cover, rise at 25°C for 2 hours.

    Dimpling and Second Rise:

    Pour 3 tbsp olive oil onto 30x40cm baking sheet with rim.

    Place dough on sheet, gently stretch to fill corners. If resistant, rest 10 minutes, stretch again.

    Create dimples: Press fingertips straight down to bottom of pan across entire surface.

    Second rise: Cover with damp cloth, rise at 25°C for 3-4 hours until puffed and airy.

    Topping and Baking:

    Preheat oven to 220°C/425°F with rack in lower third.

    Dimple again lightly. Pour over 1/4 cup olive oil mixed with 1/2 cup warm water, letting it pool in dimples.

    Sprinkle with 2 tsp coarse sea salt, 1 tbsp fresh rosemary leaves.

    Bake 20-25 minutes until golden brown, crisp bottom.

    Immediately brush with extra olive oil, cool on wire rack.
