    Prepare Tomatoes: Core tomatoes, slice into 1/2cm thick rounds using serrated knife. Arrange on paper towel-lined plate, sprinkle lightly with salt, let drain 15 minutes to remove excess moisture.

    Prepare Mozzarella: Drain mozzarella, pat dry with paper towels. Slice into 1/2cm thick rounds (should yield same number as tomato slices).

    Assemble Pattern: On large platter, arrange alternating slices: tomato ? mozzarella ? tomato ? mozzarella, slightly overlapping in circular pattern or straight rows.

    Add Basil: Tuck whole basil leaves between layers, reserving 10 small leaves for garnish.

    Make Mushroom Stock: In saucepan, combine 1.5L vegetable or chicken stock, mushroom soaking liquid (strained through coffee filter), 1 smashed garlic clove, 1 sprig thyme. Heat to simmer, keep warm.

    Sauté Mushrooms: Heat 2 tbsp olive oil + 1 tbsp butter in large skillet over medium-high. Add sliced mushrooms, cook 8-10 minutes until browned and liquid evaporates. Season with salt, pepper, 1 tsp chopped thyme. Remove half for garnish.

    Start Risotto Base: In heavy-bottomed pot, melt 3 tbsp butter over medium. Add 1 finely chopped shallot, cook 3 minutes until soft. Add 400g Carnaroli rice, toast 2 minutes until translucent edges.

    Deglaze: Add 1/2 cup dry white wine, stir until absorbed.

    Begin Adding Liquid: Add 1 ladle (about 1/2 cup) hot mushroom stock, stir constantly until absorbed. Continue adding stock ladle by ladle, maintaining gentle simmer.

    Add Mushrooms: After 10 minutes, stir in chopped mushrooms and half of sautéed sliced mushrooms.

    Continue Cooking: Continue adding stock and stirring for another 8-10 minutes until rice is al dente with creamy consistency.

    Final Touch: Remove from heat, stir in 2 tbsp cold butter, 1/2 cup grated Parmigiano-Reggiano, 2 tbsp chopped parsley. Cover, rest 2 minutes.

    Serve: Divide among bowls, top with reserved sautéed mushrooms, extra Parmigiano, drizzle of truffle oil (optional).

    Make Zabaglione:

    Prepare bain-marie: Fill saucepan with 2 inches water, bring to simmer. Place heatproof bowl on top (bottom not touching water).

    Whisk 6 egg yolks + 3/4 cup granulated sugar in bowl until pale and thick (about 5 minutes).

    Gradually add ? cup Marsala wine (or dark rum), whisking constantly. Cook 8-10 minutes until mixture triples in volume, reaches 71°C/160°F, and leaves ribbons.

    Remove from heat, continue whisking 2 minutes to cool slightly.

    Prepare Cream Base:

    In separate bowl, beat 500g mascarpone (room temperature) with spatula until smooth.

    Fold mascarpone into cooled zabaglione in 3 additions until fully incorporated.

    In chilled bowl, whip 300ml heavy cream (35% fat) to medium peaks.

    Gently fold whipped cream into mascarpone mixture until uniform.

    Assemble:

    Brew 2 cups strong espresso, cool to room temperature. Stir in 2 tbsp Marsala or rum.

    Quickly dip 24 Savoiardi ladyfingers (one at a time) into coffee for 1 second per side — moist but not soggy.

    Arrange 12 dipped ladyfingers in single layer in 9×13 inch dish.

    Spread half cream mixture (about 3 cups) evenly over ladyfingers.

    Repeat with remaining ladyfingers and cream.

    Cover with plastic wrap touching surface. Refrigerate 6 hours minimum, preferably overnight.

    Serve:

    Just before serving, dust entire surface generously with unsweetened cocoa powder using fine-mesh sieve.

    Use warm knife (dipped in hot water, wiped dry) for clean cuts.

    Day 1 – Biga (Pre-ferment):

    Mix 200g tipo 00 flour, 130ml water at 20°C, 1g fresh yeast until shaggy dough forms.

    Cover, ferment at room temperature 12-16 hours until bubbly and tripled.

    Day 2 – Main Dough:

    In stand mixer with dough hook, combine biga, 300g tipo 00 flour, 200ml water at 20°C, 10g salt, 5g malt syrup (or honey), 5g fresh yeast.

    Mix 3 minutes low speed, then 10 minutes medium speed until smooth, elastic dough.

    Gradually add 50ml extra virgin olive oil while mixing until fully incorporated.

    First rise: Transfer to oiled bowl, cover, rise at 25°C for 2 hours.

    Dimpling and Second Rise:

    Pour 3 tbsp olive oil onto 30x40cm baking sheet with rim.

    Place dough on sheet, gently stretch to fill corners. If resistant, rest 10 minutes, stretch again.

    Create dimples: Press fingertips straight down to bottom of pan across entire surface.

    Second rise: Cover with damp cloth, rise at 25°C for 3-4 hours until puffed and airy.

    Topping and Baking:

    Preheat oven to 220°C/425°F with rack in lower third.

    Dimple again lightly. Pour over 1/4 cup olive oil mixed with 1/2 cup warm water, letting it pool in dimples.

    Sprinkle with 2 tsp coarse sea salt, 1 tbsp fresh rosemary leaves.

    Layer slices in colander, sprinkling each layer with kosher salt. Weight with plate, drain 1-2 hours.

    Rinse slices, pat completely dry with paper towels.

    Bread in 3 stages: flour ? beaten eggs (3 eggs + 2 tbsp water) ? breadcrumbs (200g mixed with 50g grated Parmesan).

    Fry in batches in 1cm vegetable oil at 180°C until golden (2-3 minutes per side). Drain on wire rack.

    Make Tomato Sauce:

    Sauté 2 minced garlic cloves in 3 tbsp olive oil 1 minute.

    Add 1.2kg crushed San Marzano tomatoes, 1/2 tsp salt, 10 torn basil leaves.

    Simmer 30 minutes until thickened.

    Assemble:

    Preheat oven to 190°C/375°F.

    Spread thin layer sauce in 23x33cm baking dish.

    Layer: eggplant slices (slightly overlapping) ? sauce ? 150g shredded mozzarella ? 50g grated Parmesan ? torn basil leaves.

    Repeat 3 more layers, ending with cheese.

    Bake uncovered 35-40 minutes until bubbling and browned.

    Rest 30 minutes before cutting.

    Classic Saffron Risotto alla Milanese

    Prepare Broth: Heat 1.5L chicken or vegetable broth to simmer in saucepan. Add 0.5g saffron threads (about 1/2 tsp) to infuse.

    Toast Onion Base: In heavy-bottomed pan, melt 3 tbsp butter over medium. Add 1 finely chopped small onion. Cook 6-8 minutes until translucent (no color).

    Toast Rice: Add 400g Carnaroli or Arborio rice. Stir constantly 2-3 minutes until rice is hot and slightly translucent at edges (perlatura stage).

    Deglaze: Pour in 120ml dry white wine (preferably Italian like Pinot Grigio). Stir until completely absorbed.

    First Broth Addition: Add first ladle (about 1/2 cup) of hot saffron broth. Stir continuously until absorbed.

    Continue Adding Broth: Maintain broth at simmer. Add next ladle only when previous is 90% absorbed. Stir constantly to release rice starch.

    Test Doneness: After 16-18 minutes, taste rice. Should be al dente (firm center) with creamy exterior. Total liquid needed usually 4:1 ratio (broth:rice).

    Mantecatura (Final Emulsification): Remove from heat. Stir in 2 tbsp cold butter and 80g grated Parmigiano-Reggiano vigorously to create creamy texture.

    Rest: Cover, let stand 2 minutes (risotto should be all’onda – wavy consistency).

    Serve: Plate immediately. Optional: Top with bone marrow (midollo) for authenticity.

    Critical Technique: Constant stirring is key. Never rinse rice after cooking. Serve within 5 minutes of finishing.

  • Fettuccine Alfredo (Classic Style)

    Fettuccine Alfredo (Classic Style)

    Prep Ingredients: Bring 2 large wheels of Parmigiano-Reggiano (at least 24-month aged). Use a microplane to grate 200g of cheese into fine flakes (do not use pre-grated). Cut 250g of cold, high-quality European-style butter (minimum 82% fat) into 1/2-inch cubes. Separate 450g of fresh fettuccine (or 400g dried).

    Setup Workstation: Place large ceramic serving bowl in oven at 60°C/140°F to warm. Prepare large pot (6L minimum) with 4L water, add 30g sea salt (1.5% salinity ratio).

    Start Pasta Water: Bring water to violent rolling boil over highest heat. Meanwhile, place warmed serving bowl on heatproof surface near stove.

    Emulsify Base Sauce: To warmed bowl, add 100g of cubed butter. Using wooden spoon, work butter against side of bowl until it becomes creamy and pale (not melted completely).

    Cook Pasta: Add fettuccine to boiling water. Fresh pasta cooks 2-3 minutes; dried 8-10 minutes. Start timer and stir immediately.

    Reserve Cooking Water: At 1 minute before doneness, scoop out 2 cups (480ml) of starchy pasta water using ladle.

    Test Doneness: Remove one strand, cool slightly, bite. Should have slight resistance (al dente).

    Transfer Pasta: Using tongs (never strainer), lift pasta directly from water to bowl with butter. Allow some water to drip with pasta.

    Initial Toss: Working quickly, toss pasta with butter using tongs in lifting motion for 30 seconds until butter coats every strand.

    Add Cheese First Addition: Sprinkle 100g grated Parmesan over pasta. Immediately add 1/4 cup (60ml) pasta water. Toss vigorously for 1 minute until cheese melts into emulsion.

    Create Creaminess: Add remaining 150g butter in 3 additions, tossing continuously. After each addition, add 2 tbsp pasta water.

    Final Cheese: Add remaining 100g Parmesan, tossing until sauce becomes velvety and coats pasta evenly. If needed, add more pasta water 1 tbsp at a time.

    Rest and Serve: Let pasta rest in bowl 1 minute off heat. The residual heat will finish emulsification. Serve immediately on preheated plates.

    Critical Note: Authentic Alfredo has no cream. The creaminess comes from emulsified butter, cheese, and pasta water.

    Osso Buco alla Milanese

    Prep Veal Shanks: Select 4 veal shanks (hind leg), each 3-4cm thick (about 350g each). Pat extremely dry with paper towels. Using kitchen twine, tie each shank around circumference to hold shape during braising.

    Dredge: Mix 100g all-purpose flour with 1 tsp salt, 1/2 tsp black pepper. Dredge each shank, shaking off excess.

    Searing Setup: Heat large Dutch oven over medium-high heat 3 minutes. Add 3 tbsp olive oil and 2 tbsp butter until butter foams.

    Sear Shanks: Working in batches (do not crowd), sear shanks 4-5 minutes per side until deep golden brown crust forms. Remove to plate.

    Soffritto Base: Reduce heat to medium. Add 1 finely chopped onion, 2 carrots ( 1/2cm dice), 2 celery stalks ( 1/2cm dice). Cook 8-10 minutes until soft but not brown.

    Tomato Paste: Push vegetables to side. Add 2 tbsp tomato paste to cleared spot. Cook paste 2 minutes until brick-red color, stirring constantly.

    Deglaze: Add 1 cup (240ml) dry white wine (preferably Verdicchio). Scrape bottom vigorously with wooden spoon to release fond. Simmer until reduced by half.

    Add Aromatics: Add 4 crushed garlic cloves, 2 bay leaves, 4 sprigs fresh thyme, 2 strips lemon zest (peeled with vegetable peeler).

    Build Braising Liquid: Add 2 cups (480ml) beef stock and 1 cup (240ml) chicken stock. Bring to simmer.

    Return Shanks: Nestle shanks into liquid in single layer. Liquid should come 3/4 up sides of meat.

    Oven Braising: Cover tightly with foil, then lid. Transfer to preheated 160°C/325°F oven. Braise for 2 hours.

    Check Doneness: After 2 hours, insert paring knife into meat near bone. Should meet no resistance. If not tender, continue 30-minute increments.

    Remove Shanks: Carefully transfer shanks to plate using slotted spoon. Cover loosely with foil.

    Reduce Sauce: Place Dutch oven on stove over medium heat. Simmer sauce 10-15 minutes until thickened to coating consistency. Season with salt and pepper.

    Serve: Remove twine from shanks. Place each shank in shallow bowl. Spoon sauce over. Top with gremolata (mix of 1/2 cup chopped parsley, 2 minced garlic cloves, zest of 1 lemon).

    Key Point: The marrow is considered the delicacy. Provide marrow spoons for guests to extract.

    Blanch and Peel: Bring medium pot of water to boil. Prepare ice bath. Drop tomatoes in boiling water 30 seconds until skin starts to peel. Transfer immediately to ice bath. Peel off skins.

    Seed and Dice: Cut tomatoes in half horizontally. Gently squeeze to remove seeds and excess liquid over bowl (reserve juice). Dice tomatoes into 1/2cm cubes.

    Season Tomatoes: In non-reactive bowl (glass or ceramic), combine diced tomatoes, 2 minced garlic cloves (optional for tomato mix), 1/4 cup torn fresh basil leaves, 2 tbsp high-quality extra virgin olive oil, 1 tsp red wine vinegar, 1/2 tsp sea salt, 1/4 tsp black pepper. Mix gently. Let marinate at room temperature 30-60 minutes (never refrigerate).

    Prepare Bread: Select 1 large loaf of crusty Italian bread (Pugliese or Ciabatta). Cut into 2cm thick slices on diagonal to maximize surface area.

    Toast Bread: Preheat grill pan or cast-iron skillet over medium-high heat. Brush bread slices lightly with olive oil on both sides. Toast 2-3 minutes per side until deep grill marks form and edges are crisp but center still chewy.

    Garlic Rubbing: While bread is hot, immediately rub one side of each slice with cut side of whole garlic clove. The heat will extract garlic essence without raw bite.

    Drain Tomatoes: Just before assembling, drain marinated tomatoes in colander set over bowl to remove excess liquid (reserve liquid for drinking or other use).

    Assemble: Place toasted bread on serving platter. Spoon tomato mixture generously over each slice, allowing some to fall onto plate.

    Final Drizzle: Drizzle each bruschetta with additional extra virgin olive oil (about 1 tsp per slice). Sprinkle with flaky sea salt (Maldon or fleur de sel).

    Garnish: Top with whole small basil leaves. Serve within 5 minutes to prevent sogginess.

    Variation: For bruschetta al pomodoro e mozzarella, add small buffalo mozzarella cubes to tomato mixture.

    Authentic Italian Minestrone Soup

    Bean Preparation (Overnight): Soak 200g dried cannellini beans in 1L cold water with 1 tsp baking soda for 12-24 hours. Drain, rinse.

    Cook Beans: In fresh water, simmer beans with 1 bay leaf, 1 garlic clove for 45-60 minutes until tender. Reserve 2 cups cooking liquid. Drain beans.

    Prep Vegetables (Mise en Place): Dice 2 carrots ( 1/2cm), 2 celery stalks ( 1/2cm), 1 large onion ( 1/2cm). Peel and dice 2 medium potatoes (1cm). Trim and slice 200g green beans into 2cm pieces. Chop 200g Savoy cabbage. Dice 2 zucchini (1cm). Mince 4 garlic cloves. Chop 400g canned whole tomatoes.

    Build Flavor Base: Heat 1/4 cup olive oil in large heavy pot over medium heat. Add diced onion, carrot, celery. Cook 10 minutes until soft but not brown.

    Add Aromatics: Add minced garlic, 1 tbsp chopped fresh rosemary, 1 tsp chopped fresh sage. Cook 1 minute until fragrant.

    Add Tomatoes: Add chopped tomatoes with juice, 2 tbsp tomato paste. Cook 5 minutes until tomatoes break down.

    Add Hearty Vegetables: Add potatoes, green beans, cabbage. Stir to coat with tomato mixture.

    Add Liquid: Pour in 1.5L vegetable stock, 2 cups reserved bean cooking liquid. Bring to simmer.

    First Simmer: Partially cover, simmer 20 minutes until potatoes are tender but not falling apart.

    Add Tender Vegetables: Add zucchini, cooked cannellini beans. Simmer 10 minutes uncovered.

    Pasta Addition: Add 100g small pasta (ditalini or small shells). Cook according to package time (usually 8-10 minutes).

    Final Seasoning: Stir in 1/2 cup chopped fresh parsley, 1/4 cup chopped fresh basil, salt and pepper to taste. The soup should be thick but still brothy.

    Rest: Remove from heat, let stand 15 minutes before serving. The flavors will meld.

    Serve: Ladle into bowls. Drizzle with extra virgin olive oil, sprinkle with grated Parmigiano-Reggiano.

    Note: Minestrone improves overnight. Reheat gently, adding extra stock if too thick.
